Peach Basil Bruschetta

Ingredients
2 medium-sized ripe peaches
1 medium-sized (can cub 2 medium sized red tomatoes) yellow tomato
1 medium-sized orange tomato
6 large finely chopped basil leaves
1/2 clove minced garlic
1/4 cup crumbled feta cheese
1 tsp olive oil
Pinch of salt
Pinch of black pepper
1 French baguette loaf
Olive oil

Directions
STEP 1
Finely dice the peaches and tomatoes and place in a mixing bowl. Add the chopped basil, minced garlic, feta cheese, salt, pepper and olive oil. Toss until all ingredients are well combined. Place in refrigerator for half an hour to an hour.
STEP 2
Heat oven to 350° F (180° C). Slice French baguette diagonally. Brush both sides with olive oil and place on baking tray. Place in oven for 5 to 7 minutes until toasted. Remove from oven.
STEP 3
Spoon about 1 to 2 tablespoons of the bruschetta mixture on each slice of bread. Place on serving tray and serve. If desired, garnish with a touch of crumbled feta cheese or a basil leaf.
