Pears

The light green Anjou, the golden Bosc and the yellow Bartlett. Each sweet, juicy pear has a unique look and taste.

Pears are one of the very few fruits that do not ripen on the tree, but need time for the sugars to develop off the branch.

As a result, we pick the pears when they are immature which allows the fruit to ripen over the course of weeks, including time in your local grocery store.

How can you tell if a pear is ripe? Instead of digging your finger into all the pears on the shelf, try the stem test. Put gentle pressure on the top of the pear near the stem, if it gives way a little then it’s ripe. As pears ripen on the outside last, by the time the entire exterior of the pear is soft it is overripe.

Varieties

  • Anjou

The elegantly named Anjou pear is naturally sweet. Light green in colour with a yellow tinge when ripe, it has exceptional keeping qualities.

  • Bartlett

Bartlett pears have clear, yellow skin when ripe. Their flesh is juicy and sweet with a fine-grained, smooth texture. They’re downright delicious on their own and, because they keep their flavour even after heating, they’re a natural for canning.

  • Bosc

This pear both looks and tastes beautiful. It has a naturally occurring russet, giving it a gorgeous golden appearance. Its juicy flesh is nothing short of heavenly. Bosc pears remain firm and keep their classic shape during cooking. They also go well with spices and sauces because of their full-bodied flavour.
