Apple Meatloaf

Ingredients
1 tbsp (15 mL) canola oil
1 cup (250 mL) finely chopped cooking onion
2 large cored and grated BC Tree Fruits Royal Gala apples
1 tsp mild paprika
1 tsp dried or fresh thyme leaves
½ tsp (optional) dried sage
pinch cinnamon
½ -1 tsp salt
1/4 tsp freshly ground pepper
2 large eggs
2 tsp (10 mL) Worcestershire sauce
1 ½ cups dry bread, cracker, or corn flake crumbs
1 1/2 lbs (700g) (beef, pork, or a blend) of lean ground meat

Directions
STEP 1
Preheat oven to 375°F.
STEP 2
Saute onion in canola oil until glassy. Stir in grated apples, spices, salt and pepper, then remove to cool.
STEP 3
Whisk eggs and worcestershire sauce in a large mixing bowl, stir in bread crumbs and apple/onion mixture. Lightly crumble ground meat into wet ingredients, tossing together with two forks.
STEP 4
Spray one large (9 x 5 x 2.75) loaf pan or two smaller loaf pans. Gently press meatloaf into pan.
STEP 5
Bake 60-75 minutes on a rimmed baking sheet until a meat thermometer reads 160-180 deg F. Remove and rest 10 minutes. Slice into 1 inch pieces and enjoy!

*Optional: during the last 15 minutes of cooking, glaze with barbecue sauce, peach or apricot jam, or balsamic vinegar.
