  • 6 BCTF Apples, mixed variety
  • 1 Bottle of Sparking local wine, (choose sweet over dry)

Directions


  • STEP 1

    Using the large holes on a box grater, grate the apples into a large bowl.

  • STEP 2

    Press through a potato ricer, and collect the juice in a pitcher. If you do not have a potato ricer, then place the grated apple in a fine-mesh strainer and press the juice with a large spatula or the bottom of a ladle.

  • STEP 3

    Six apples will yield approximately enough juice for six Mimosas.

  • STEP 4

    Pour 1.5 oz of apple juice into a champagne flute, top with sparkling wine.

  • STEP 5

    Garnish with a slice of apple; cinnamon stick swizzler optional!

  • STEP 6

    As apples ripen, the starches turn into sugar, making them softer, more fragrant, and full of juice. Mixing varieties will give a richer, more complex apple-tastic flavour!
