Using the large holes on a box grater, grate the apples into a large bowl.
Press through a potato ricer, and collect the juice in a pitcher. If you do not have a potato ricer, then place the grated apple in a fine-mesh strainer and press the juice with a large spatula or the bottom of a ladle.
Six apples will yield approximately enough juice for six Mimosas.
Pour 1.5 oz of apple juice into a champagne flute, top with sparkling wine.
