Apple Cranberry Crisp

Ingredients
1/2 cup all-purpose flour
1/2 cup rolled oats, quick or whole
1/2 cup (175 ml) brown sugar, packed
¼ cup honey, maple syrup, or corn syrup
2-4 tbsp salted butter
3 large BC Tree Fruits McIntosh apples
3 large BC Tree Fruits Royal Gala apples (any single variety or mix of apples will work nicely.)
1 tbsp cornstarch or flour
2 tbsp lemon juice
1 cup (125 ml) cranberries, fresh, frozen, or dried

Directions
STEP 1
Pulse flour, sugar, honey, and butter in food processor until butter is just mixed in. Add oats and pulse just once.
STEP 2
Peel (optional!), core, and slice apples, toss with cornstarch and lemon juice.
STEP 3
Lightly butter (or spray) a 9 x 13 inch baking dish, add apple/cranberries.
STEP 4
Sprinkle, but do not press, the oatmeal streusel atop the apples.
STEP 5
Bake at 350° F for one hour until topping is toasted and apples are tender. Let stand for 5 minutes before serving.
