Apple and Bacon Stuffed Mushrooms

Ingredients


  • 24 medium-sized mushrooms
  • 1 Tbsp (15 mL) canola oil
  • 1/2 cup (125 mL) finely chopped onion
  • 7 pieces cooked and crumbled bacon
  • 2 (peeled or not) coarsely grated apples
  • 1/2 cup (125 mL) bread crumbs
  • 1/2 cup (125 mL) freshly grated Parmesan cheese

Directions


  • STEP 1

    To give mushrooms a richer flavour while making them less watery, roast the mushrooms before stuffing. To do so, clean mushrooms, remove stems and place stem side down on a baking pan lined with parchment paper. Bake at 350° F (180° C) for 15-20 minutes. Remove from heat and allow to cool.

  • STEP 2

    Meanwhile, place oil in saucepan over medium heat. Add onions and sauté until soft, about 5 minutes. Remove from heat.

  • STEP 3

    In large bowl, combine cooked onion with bacon, apple and breadcrumbs.

  • STEP 4

    Spoon into mushrooms and sprinkle each with Parmesan cheese.

  • STEP 5

    Bake at 350° F (180° C) for 15–20 minutes.
