For the Base
Roughly mix softened butter, sugar, vanilla, and flour using a hand pastry blender or food processor. Press the crumbly dough evenly into a glass 9-inch pie plate and freeze while the rest is prepared.
For The Filling
Blend the cream cheese, sugar, egg, and vanilla well by hand or machine; spread over frozen base.
For The Topping
Toss peeled and sliced apples with cinnamon and sugar, layer over cream cheese filling. Top with nuts or press the candy eggs around the perimeter.
Bake on a centre rack for 10 minutes at 450°F, then reduce temperature to 400°F and bake another 20 minutes.
