Apple, Flax and Oatmeal Monster Cookies

Ingredients


  • 2 large BC Tree Fruits apples, ¼ inch dice, skin on
  • 1 large BC Tree Fruits apple for Monster face designs
  • ¼ cup whole flax seed
  • ¼ cup apple juice or water
  • 2 eggs
  • 1 cup brown sugar
  • ¾ cup white sugar
  • ½ tsp almond (or vanilla) extract
  • ¼ cup melted butter
  • 1½ cups flour
  • 1½ cups rolled oats
  • ¼ tsp salt
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • ½ tsp ground cloves
  • ½ tsp baking soda

Directions


  • STEP 1

    Microwave juice, flax seed, and apples on low/defrost for 10 minutes, stirring once.  This will soften the flax and “set” the apples so that they won’t fall apart. Set aside to cool.

  • STEP 2

    Whisk eggs, sugars, and extract together, beat in melted butter.

  • STEP 3

    Mix flour, oats, salt, spices, baking soda and baking powder. 

  • STEP 4

    Toss in apples/flax until coated, then add egg/sugar mixture until dough comes together.

  • STEP 5

    Preheat oven to 375°F.  Spray 2 cookie sheets with non-stick spray, or use parchment to line. 

  • STEP 6

    Portion cookies onto baking sheets, using a large spoon or ice cream scoop.

  • STEP 7

    Cut eyes, nose and mouth shapes from the remaining apple if desired.

  • STEP 8

    Flatten cookies with the bottom of a drinking glass, and arrange the monster faces.

  • STEP 9

    Bake for 18-25 minutes, until centres are set and edges are just beginning to brown.
