Combine quinoa and broth (in small saucepan) and bring to a boil
Reduce to simmer, cover and cook for 15 minutes
Remove from heat and let stand, covered for 5 minutes
Prepare apples, celery and parsley:
- Wash and dry
- Core and dice apples
- Trim and dice celery
- Discard parsley stems and mince leaves
Transfer to a large bowl, then add almonds and cranberries
Peel and mince garlic
In small bowl, prepare dressing by whisking together garlic, squeezed lemon juice, olive oil, honey and salt and pepper
Uncover quinoa, fluff with a fork and add to salad mixture
Pour dressing and toss
