Peachy Cheesecake

  • 2 tablespoons (30 ml) sugar
  • 1 teaspoon (5 ml) Fruit-Fresh powder
  • 2 cups (500 ml) sliced fresh peaches
  • 1 round frozen cream cheese cake (to serve 4 or 5)
  • 1/2 cup (125 ml) peach preserves
  • 1/4 teaspoon (1.25 ml) almond extract

  • STEP 1

    Combine sugar and Fruit-Fresh; add peaches and toss well to coat each slice. Cover and refrigerate. Thaw cheesecake according to package directions. Heat preserves over low heat; add almond extract. Cool. Drain peaches well and arrange on top of cake. Glaze with preserves. Refrigerate until serving time.
