Apple Chicken Quesadillas



  • 1 lb. Ground chicken
  • 8 Whole wheat tortillas, 6" diameter
  • 2 cups Cheddar cheese, grated
  • 1 Medium red pepper, thinly sliced
  • 2 Medium Granny Smith apples, thinly sliced
  • Salsa and/or guacamole, optional

  • STEP 1

    In large skillet, brown chicken until completely cooked.

  • STEP 2

    Line 2 baking sheets with parchment paper or mist with cooking oil spray.

  • STEP 3

    Place 2 tortillas on each baking sheet. To each, layer on a sprinkle of cheese, ½ cup cooked chicken, sliced red pepper and apple.

  • STEP 4

    Cover with another thin layer of cheese and top each with another tortilla.

  • STEP 5

    Place under the broiler for 3-4 minutes or until brown. Turn over and broil for an additional 3-4 minutes. Remove from heat and slice each quesadilla into 6 pie shaped pieces.

  • STEP 6

    Serve with guacamole or salsa if desired.
